Once you imagine soft and moist chocolate cakes covered with creamy frostings, you’d never want to celebrate your birthday without it. Here’s how to bake that classic birthday chocolate cake:

Preparing the frosting at home would be a win as it would contain no added and unwanted preservatives, the ingredients are fresh and it is not much time-consuming to prepare it.
- To prepare the frosting, add 3/4th cup of cocoa powder, three sticks of unsalted butter and six cups of confectioner’s sugar to a bowl of mixer and mix it on a high speed until you find the mix to appear smooth. Add 1/4th cup of milk and a tablespoon of pure vanilla extract to this mix until the frosting becomes fluffy, yet smooth. Note that the key to obtaining a fluffy frosting is to continue mixing the ingredients on a high speed, without which it would appear lifeless.
- For preparation of the cake, preheat the oven initially to 350 degrees. Add two large eggs and two cups of granulated sugar to a bowl of stand mixer and beat it on a high speed for about two to three minutes. While the mixture beats, add add ½ cup of cocoa powder, one teaspoon of instant coffee powder and half a teaspoon of salt to hot water. Add this mix to eggs and sugar.
Slow the mixture down and add 2 ½ cups of all-purpose flour, two teaspoons of baking soda, one teaspoon of baking powder, one cup of vegetable oil, one cup of buttermilk and one tablespoon of pure vanilla extract to the mixer and then beat it. Add the cake batter to the pans after spraying it with non-stick baking spray. If you want to make a multi-layered cake, add the batter to all the pans evenly.
Baking procedure :
Bake the cake for about 20 to 22 minutes or until you take a toothpick test and the cake comes out clean. Allow the cake to cool down completely making sure each layer has cooled down before removing them from the pans.
- Add the frosting made earlier to the the cooled down cakes and spread evenly with a steady hand. To decorate and make the cake look more celebratory, add cake toppers such as sprinkles, sparklers and chocolate chips or cookie crumbs.
